day twenty-one. for lunch i tried the gardein classic style buffalo wings along with squash casserole, rice, and green beans. i’m not so sure about these. they were buffalo-y enough but a little squishy. buffalo chicken is my favorite food ever so i hope i’ll like them better next time around. maybe i should bake them longer. then as i was reading during the afternoon i had some roasted red pepper hummus from publix with some pita chips and then half of a small bagel topped with nutella. i was very pleased to find out that the publix brand of hummus tastes just like the athenos kind i usually get, plus it’s way cheaper.

day twenty. tried fake bacon for lunch on a “blt.” the blt consisted of facon, sundried tomato pesto mayonnaise, and lettuce. the facon tasted exactly like sunflower seeds. i’ll try it again when i have real mayo. then for dinner i had southwestern bean stew over polenta. we used sundried tomato polenta instead of regular. i’d never had it before but it was tasty. gosh i had sundried tomato three times today.. i also had an alouette spread with some wheat thins.

days eighteen and nineteen. thursday night i had “ravioli pizza” - layers of ravioli, mozzarella, and marina. michael’s mom added tomatoes and basil on top of ours, but a few pepperonis managed to lurk in my serving. luckily i found them before it was too late. then last night we went to a birthday party and i had a spinach and artichoke dip plus some bean avocado and mango? salsa.

day seventeen. breakfast: swiss and spinach omelet, biscuit, and grape juice with ice. lunch: fried rice with egg, peas, carrot, scallions, and water chestnuts and a salad with carrots, cucumbers, and light ranch. i hate taking pictures when i’m in the cafeteria because i generally sit by myself and read so i imagine i look pretty stupid. but these meals were too good to not document.

day fifteen. spicy lentil soup with corn muffins. mom makes vegetarian meals for the 3 nights i eat dinner at home. this was absolutely incredible. the texture, the flavor, the color. the muffins weren’t bad either, although i’m not sure if i enjoyed the actual corn kernels lurking inside the crunchy exterior.

day ten. lunch with lauren at dolce vita again. i had black bean and corn tacos with an avocado sauce. lauren, in her traitor ways, had a bacon quiche. for dessert i got a $1 chocolate mousse tart.

day seven. gardenburger original veggieburger. it was easy to cook and quite tasty, but i was expecting it to be… less veggie more burger-esque? since it tastes so vegetable-y i’ll leave out the cheese next time.

day one. red lentil and vegetable soup. i could only find confetti lentils as my red lentils were moth-ridden. it could’ve used a smidge more cumin but was very hearty.
